  • Named after Maréchal de Sennecterre, the man who brought it to the table of King Louis the XIV, Saint Nectaire is a unique and flavorful cheese.

  • Made from the milk of the Holstein and Montbéliarde cows, this cheese is usually cave aged and dried on rye straw.

  • Both of these factors contribute to the smell and flavor of the cheese which can be somewhat intense.

  • Throughout the aging process, the cheeses are washed in brine and water.

  • The development of a yellow or red mold on the rind is a signal to the affineur that the cheese is ready to be eaten!
