A pecorino fresco (simply meaning fresh young sheep's milk) cheese, the name Brinata derives from the Italian word "frost."
This is in reference to its soft, fluffy "snowy" looking rind.
The pâté is off-white and riddled with eyes. It is creamy, delicious and light in taste and texture.
A mild cheese that is great on a sandwich or in wedges paired with a nice dry white wine.
