This cow's milk cheese from the gouda family is flavored with cumin (sometimes cloves and caraway are added too) and made with partially skimmed milk, making it a lower fat (30 - 40%) and very flavorful option.

It is drier and spicier than gouda, and coated in a red wax rind.

Excellent with beer on dark bread or crackers.
