The king of Swiss cheeses.
It arrives in enormous 200 pound wheels about 45 inches in diameter.
The rind is thin, and the interior is speckled with eyes (holes).
When it is young, it has a delicate, sweet, earthy and buttery taste.
With age, it can develop a bit of a bite.
Since the name Emmental is not protected, there are Emmentals produced in France, Germany, Finland, Denmark and the United States, however, none compare to the original.
It still remains one of the most important and plentiful Swiss cheeses.
One of the traditional cheeses used in fondue.
